I’M BACK WITH A BAKING POST. Actually, in this case, it’s a no-bake baking post but omg, does it feel goood.
I’ll tell you what doesn’t feel good mind – Monday. Sitting at your desk. You get it around 11am and then again around 3/4ish. Or if you’re anything like me, you seize any time of the day to snack. But the acheeee to just dig in to a box of Krispy Cremes or raid the chocolate box is at its peak and considering I only have 2 weeks until Charlie gets home and I need to look like J-Lo, I thought it’s about time I sort myself out and opt for something remotely healthy. And don’t get me wrong, my daily berry and grape intake is impressive, but sometimes we need a little more of a pick me up and that’s where these oat-y bad boys come in.
WHAT YOU NEED –
½ cup of peanut butter
1 banana (I used 1 ½ because banana is too good to settle for one)
1 ½ cup of oats
2/3 cup of desiccated coconut flakes
½ cup dark chocolate chips (I used crunchy chocolate bites which nope, may not be THAT healthy but the crunch gives the balls a little sumin’ sumin’)
1 tsp of honey OR raw fruit sugar (You can find this in Holland & Barrett’s)
THE HOW –
Get this – Add all ingredients into a big bowl and combine.
Place combined oat mixture in the fridge for 30 minutes.
Remove and roll mixture into small balls (I think the mixture makes around 16 or so)
Keep in an airtight container in the fridge for up to 2 weeks and take out and about for those much needed pick me up snacks.
SO good and SO easy.
I am sure I’m not the only person on the planet that finds preparing lunch for work everyday the biggest downer when you get home when all you want to do is get cosy and binge watch Teen Wolf so hunting down easy treats like this is a God-send. I’m on the look out for other quick and easy lunch ideas so would be beaut to find out what recipes you prepare.
Hopefully you won’t have to wait ten years for the next baking post so I’ll be seeing ya.
