It’s day three of being bed bound by the flu but today, I didn’t let it defeat my appetite. I AM HUNGRY AGAIN, YAY.

Lunch today – baked sweet potato with bacon, tomato, LOTS OF cheese and spring onion.



The evidence doesn’t do it justice (nor do my rusty trays, soz) but it’s such an easy one and just half a potato fills you up. Maybe not the healthiest once all the bacon and cheese has covered the goodness but I’m sure I could do worse.

Bake in the microwave for 10 minutes, cover with your desired topping and place in the oven on 180 for a following 15 or until cooked. I stuck it under the grill for the final 2 so that my cheese was nice and stringy!

Easy peaaaasy and so yummy. Basically a pizza for lunch, but better..
